| Forschner Forged Chef's Knife, Full Tang, Black POM, Solingen, 8 in., 41620. Special order item not carried in stock, 2-3 weeks production lead time, non-returnable. Full tang construction with POM (plastic over molded) handles made of Poly Oxy Methylene will hold its shape and will not crack or separate from blade. Also known as a Cook's Knife, the chef's knife is an all-purpose knife used for slicing, chopping, dicing, mincing, and many other functions. The blade is curved to allow the cook to rock the knife on the cutting board for a more precise cut. Most chefs recommend using the largest chef's knife that is comfortable in the cook's hands. Molybdenum/Vanadium (X50CrMo V15 steel) blade, provides maximum sharpness and edge retention. Forged blades are made in an intricate, multi-step process. Ice tempered to create a hardened blade that will sustain its sharpness longer and give desired effect when re-sharpened. Traditional hot-drop forging creates a superior steel product with increased elasticity and maximum internal strength. Forged blades are typically thicker and heavier than stamped blades. Forged blades are often considered superior to stamped blades, and are often preferred by chefs.
