The blade is curved to allow the cook to rock the knife on the cutting board for a more precise cut. Most chefs recommend using the largest chef's knife that is comfortable in the cook's hands. Forged Blades: Forged blades are made in an intricate, multi-step process. Ice tempered to create a hardened blade that will sustain its sharpness longer and give desired effect when re-sharpened. Traditional hot-drop forging creates a superior steel product with increased elasticity and maximum internal strength. Forged blades are typically thicker and heavier than stamped blades.
