Setting the correct Refrigerator temperature to preserve freshness

Temperature is the most important factor in the location equation. The warmest part of your refrigerator is nearest the door and the coolest area is in the back. As a quick reference, store these in the warmest section of your refrigerator around 40° to 45° F:

  • Cucumbers
  • Eggplant
  • Peppers
  • Avocados
  • Red potatoes
These will fare the best in the mid¬≠section of your refrigerator around 35° to 39° F:
  • Green onions
  • Squash
  • Sprouts
  • Herbs
These go in the back of your refrigerator. These items need to be stored at the coolest temperature around 33°-35° F:
  • Broccoli
  • Cabbage
  • Apples
  • Celery
  • Lettuce
  • Asparagus

And, some items should be stored in the coolest section of your kitchen, not in the refrigerator at all! Temperatures ranging from 50°-55°F:

  • Bananas
  • Potatoes
  • Tomatoes
  • Onions
